Captain Breakfast’s Savory Sweet Bacon Recipe!!!

I know what you’re thinking.  You’re wondering how I could possibly reveal one of my Captain Breakfast Bacon Secrets to the internet at large…  Well kids, Breakfast was always meant to be shared.  And the only real secret ingredient is love.  The love I have for delicious Bacon.

Ingredients:

1lb Good Thick Cut Bacon

3 Tbsp of Red Pepper Flakes or 1 Tbsp of Cayenne Pepper

3 Tbsp Brown Sugar (I was out of brown sugar so I made some using
                                   3 Tbsp of regular sugar with a ¼ tsp of molasses)

That’s right, the Captain makes his own damn brown sugar.

  Procure good bacon.  It doesn’t really matter what kind or from where.  You just want to make sure it’s a thick cut and not really fatty.

Step 1. Pre-heat oven to 350 Degrees.

Step 2.  Wrap a 9x14 baking sheet in foil (to prevent the sugar from sticking to the pan) and then lay out the bacon on the pan like so:

Make sure none of the pieces are overlapping or you’ll end up with undercooked bacon. 

Let the bacon get to room temperature before cooking it.

Step 3.  Sprinkle bacon with red pepper flakes or cayenne pepper.  Liberally for spicier bacon and less for a more mild flavored bacon.

I like the pepper flakes over cayenne for the texture.

Step 4.  Put the bacon in the oven for 13-15 minutes depending on how your oven cooks. 

Step 5. After 13-15 minutes spin the pan 180 degrees in the oven to ensure even cooking.

Step 6. After another 8-10 minutes pull the bacon out of the oven and place the pan on a towel on your counter and sprinkle the bacon liberally with brown sugar.

Step 7. Flip the bacon on the pan with a fork.

Step 8. Sprinkle bacon liberally with brown sugar and red pepper flakes or cayenne. (less red pepper or cayenne for less spicy bacon)

Step 9. Put bacon back in the oven for 6-8 minutes

Step 10. Spin the pan 180 degrees again to ensure even cooking.

Step 11. Continue baking for another 4-6 minutes.

Step 12. Remove bacon from oven and transfer from pan to plate to avoid extra greasy bacon.

Step 13. Let the Bacon slap the taste out of your mouth.
